As young kids, the center of our family evolved around the kitchen watching my Dad’s cooking. As we grew older, we started to appreciate his wonderful passion and art for cooking. By 1991 we were ready to share it with you and the first Favela’s Restaurant was born.What was once a dream, it is now a 20 year dream come true!

Thank you to all that have crossed our doors, we take pride in what we do since we consider Mexican food an art with all its color and flare. We will cross all boundaries to perfect it and not hold back to create it.

The Story Behind Favela's Fusion



Veronica Favela-Diaz is the owner of Favela’s Restaurants located in Fairfield and Vacaville. Born and raised in Northern California, Veronica is a first generation of Mexican decent and is the first of three children to Elisardo Favela and Josefina Saucedo. She was lured into the culinary world at the young age when her father’s passion for food was the center of attention at dinner time.

By 1993 and demand from out-of-town customers, prompted Veronica to expand the business and open a second location in Vacaville which has been a success since it’s opening. Never straying from the original intention, never losing focus on consistent and affordable Mexican food and excellent service, the restaurant continued its steady rate of growth. By 1998 a third location on the north side of Fairfield was opened.

While attending College, a young Veronica and her father found a need for a new style of Mexican restaurant; it would be a casual style with festive surroundings and by 1991 the first Favela’s in downtown Fairfield was opened. Two years into the business and never giving up in school, Veronica successfully completed college and obtained a Bachelor Degree in Education from the Sacramento State University.

Shortly after marrying her best friend Edgar, the couple traveled all over México to uncover the traditional “Sabores de Mexico” and thanks to the entrepreneurial success of the restaurants; they were encouraged to elevate their own standards in the Mexican cuisine. These travels inspired them to open in 2008 their latest venue: - “Favela’s Fusion Tequila Lounge”. This restaurant obtained the prize for the Best New Business in Solano County and has obtained great recognition in the community for the fresh contemporary new take on Mexican cuisine.

Veronica has always been eager to improve things in the community; she has been a member of the Fairfield Planning Commission and during her term, she assisted in the re-development of Fairfield’s Downtown.

She whole-heartedly believes in always providing the best customer service, continuously learning about food, culture and always having fun with “La Familia”.

Favela’s Fusion Upscale, Elegant: Fairfield Restaurant Takes Mexican Dining to Next Level

FAIRFIELD — Before you go to Favela’s Fusion, smash any notions or memories you may have about Mexican dining.

You are not going to a funky dive or a homogenized chain restaurant. And you may not find a typical plate of rice, beans and an entree for less than $10.

At Favela’s, you are going to experience Mexican fine dining at its best from beginning to end. You will pay more. It will be worth more.

While the exterior of Favela’s Fusion may be nondescript, visitors who enter the restaurant are immediately transported by the sophisticated, artistic and enchanting space inside.

Original art from Guadalajara adorns the walls. Comfortable, intimate seating invites and welcomes. Experienced staff members are on hand to explain the comprehensive and intriguing menu. They are also available to assist with many of the restaurant’s cocktail or wine options available at the full bar.

“We wanted to take the Mexican dining experience to the next level,” says Veronica Favela-Diaz, who together with her husband owns Favela’s Fusion and two other more traditional Mexican restaurants located in Fairfield and Vacaville. “We are not trying to present something fast or cheap, which a lot of people are accustomed to. We worked hard to develop a special vibe and culinary experience that would help show another side of food from Mexico.”

While the entrees are tempting, the restaurant’s appetizers are a fascinating gastronomical journey all on their own. They range from their well-loved guacamole to two different types of ceviche to empanadas and Favela’s exclusive “Z” tacos made with sirloin steak and melted cheese. Special appetizer prices are available from 3 to 6 p.m. daily.

Main plates feature classics with new twists, such as the Enchiladas Oaxaquenas dish that offers corn tortillas stuffed with shredded chicken and topped with a customized mole sauce (a traditional gravy made of dried chilies, plantains, raisins, chocolate and nuts) that is made from scratch. Also on the menu is a jumbo shrimp dish in a tequila sauce and Favelas well-known and beloved Chile Relleno. Prices for appetizers can range from $7.50 to $10.25 while entrees average at about $20.

“Our food is top quality,” says Favela-Diaz. “Truly good Mexican food is very complicated and there are several steps that must be taken to ensure that it’s special. We have a consultant chef from Napa who lived in Mexico and was inspired by his grandmother’s dishes. He has helped us with making sure we continue to offer the best of authentic Mexican cooking but also modern techniques. Everything we make is chopped, peeled and roasted on site. We don’t take any shortcuts.”

Favela-Diaz, who has an insatiable curiosity about culture and cuisine, is celebrating her 25th anniversary in the restaurant business this year.

“It just started out as a crazy idea of mine to go into the business, but I really found a passion for it,” she says.

She gives a great deal of the credit to her staff members. Many of them have been with her since she started out.

“There is so much passion among the people who work here, and they really make it happen,” she says.

Favela’s Fusion is located at 1500 Oliver Road, Suite D in Fairfield. The hours of operation are 11 a.m. 9 p.m. Monday, Tuesday, Wednesday, Thursday, Friday and Sunday. All About Tapas Small Plates


Endulge me for a moment. There's a lot of quirky history about the origin how tapas small plates came into being. Let me regale you with a few interesting tidbits about the evolution of its tradition...

First, how do you pronounce Tapas? When pronounced correctly, it sounds like [TAH-pahs]. If pronounced like a typical United States-er, like me, it might be heard as sounding like TAP-uhs... It's your choice!

Second, what is the definition of Tapas? Well, I browsed, and peeked and looked everywhere. This is the best tapas definition I could find.

Popular throughout Spain in bars and restaurants, tapas are appetizers that usually accompany SHERRY or other APÉRITIFS or COCKTAILS. They can also form an entire meal and can range from simple items such as olives or cubes of ham and cheese to more elaborate preparations like cold omelets, snails in a spicy sauce, stuffed peppers and miniature sandwiches.

Sounds absolutely like my kind of meal! I love anything "miniature". Including my food!

Now on to more of the history of tapas...

Tapas and the tapas small plates tradition come from Spain as the story goes. They are snacks. As simple as that! These Spanish snacks are small plates with little portions of olives, cheese, bread and lots other unique and creative combinations of food and tapas ingredients.

In Spanish, the word Tapa means "cover". So how does this relate to "snacks" you ask? Well, there are several interesting explanations.

The most commonly cited narrative of the etymology of tapa is that it is an item, either a piece of bread or a flat card of some kind that would often be placed on top of a drink to protect it from those annoying, buzzy flies (smart!) Somewhere in time, it became a custom to put on top of the "cover" small nibbles of delectable goodies (really smart!) Viola! Tapas small plates were created - IF this explanation is to be believed.

Another theory is that the tapas "covered" the appetite between the time Spaniards finished work and when they would take their late evening meals. (Sheesh! I would be hungry too if I had to wait that late to eat!)

There's also the story that some experts believe that the name, tapa or tappas originated sometime around the 16th century. At that time, a few tavern owners from Castilla-La Mancha discovered that the strong, odiferous smell of mature cheese could help disguise the fact that they were serving bad wine from their establishments.

Thus, serving free cheese with the wine "covered" the bad taste of the wine and the fact that they were cheating their customers! The offering of free cheese when serving cheap wine, became wildly popular.

Unscrupulous practices? Yes, but the mouth-watering custom of tapas small plates was invented, according to this version of it's origin.

One more interesting bit of tapas history:

A few researchers assert that the tapa was born when the Spanish king, Alfonso the 10th (known as The Wise), became ill and had to take small bites of food with some wine between meals. (Wow! He must not have been feeling too bad!)

Once King Al recovered from whatever disease was afflicting him, he decreed that no wine was to be served in any of the inns in the land of Castile... (what???!!!! no wine??? wait... keep reading...) UNLESS, the wine was served with something to eat. No wonder they called him King Al, the Wise.

Lots of people in his kingdom, apparently would drink their meals (and we're not talking milk!) instead of eating their meals. You can only imagine what the streets must have been like at night, back in the olden days of Spain before the recovered king had his say.

Beyond the royal disease of our friend, Wise King Al, in recorded tapas history, there's yet another theory that the first tapas small plates appeared because of the need to take small amounts of food during the work day of many farmers and workers.

This allowed them to continue working until it was time to eat the heavy midday meal. (Wow, yet, another demonstration of the voracious appetite of man... oh how we all love to nibble). Wine was the perfect drink to go along with the tapas small plates.

And if you didn't know this already, wine makes you feel mellow, increases strength, (or so the workers all told their wives!) And in the winter, a little wine warmed the body to help the workers combat those cold, cold days in the fields and workshops of the Middle Ages.

So, between covering the wine with smelly cheese and covering the wine from dirty, germ-carrying flies, small plates evolved from these covering practices. Small plates can only contain small portions, thus, a small bite before a meal not only enhanced the appetite, but had a usefulness beyond the obvious.

Today, a favorite way of eating is indeed smaller portions on small plates.

Favela’s Celebrates 25-Year Milestone

FAIRFIELD — The devotion of Favela’s employees is the key to the successful 25 years of business in Solano County, according to owner Veronica Favela.

Favela graduated from California State University, Sacramento, with a degree in business. She thought about what business to begin, spoke with her father about starting a restaurant and – with family recipes he provided – opened Favela’s restaurant on Texas Street in Fairfield a quarter-century ago.

Her business has grown from one small restaurant to three businesses in two communities.

“Success wouldn’t have happened without the loyal patrons and the dedication of the staff who are considered part of the family,” Favela said.

Her employees couldn’t agree with her more.

Maria Ortega, 55, who works as a server, has been with the company for 14 years, working in several positions.

“It’s been good to me,” she said.

She stays because she is happy and likes her work.

Many of Favela’s employees have been with her through good times and bad because everyone is family.

“I started right out of school and have been here for 18 years,” said Lupita Serrato, 34, manager at Favela’s Fusion.

Serrato started working at the restaurant when she was single, childless and newly graduated. Since then, her children have gone to school with Favela’s children. She watched Favela’s son go to college and take his first step out into the world.

“She gave me a chance to support my kids and myself,” Serrato said. “She has been very flexible and accommodating for me.”

Mario Vazquez’s passion for cooking has grown over the years. He has been with the company for 15 years, working at all three locations.

“I put my heart into the food,” Vazquez said. “I have a very big passion for making food for people.”

The first restaurant opened in 1990 on Texas Street in a what Favela describes as a small hole-in-the-wall spot. Within three years, she had opened Favela’s Taqueria on Harbison Drive in Vacaville. Then in 1998, she opened Favela’s Mexican Grill on Texas Street. Before opening Favela’s Fusion in 2008, she closed the original restaurant on Texas Street and rented out the space.

“It was tiny,” Favela said.

The idea for the Favela’s Fusion began a few years before and planning went ahead, but then the economy crashed and they experienced some tough times bringing that business together.

“That was the hardest thing for us,” Favela said. “We made it by putting our heads together and coming up with ideas that were different for getting people here.”

Despite some lean times, the authentic Mexican restaurant has thrived and grown, including changes to the menu and to the interior.

“I have no intention of expanding more,” Favela said. “I want to just maintain the quality of service and food.”

History of the Margarita


Like any drink that reaches such ubiquity, the history of the Margarita is shrouded in layers of myth and marketing. As such, the 'where' and 'who' are things we may never truly know. What we do know is that this refreshing summer favorite consists of tequila, lime, and an orange liqueur served in a salt-rimmed glass. Beyond that, we get into speculation and experimentation (the fun stuff).

The name 'margarita' is the Spanish form of the English name 'Margaret,' but is also the Spanish name given to the Daisy. Now it just so happens that, around the time that we see the margarita gaining popularity historically, there was another common drink in America called a daisy. The daisy similarly involved a citrus liqueur, a complementary citrus flavor, and rum. This being only a decade or so after the end of prohibition, however, there was a lingering popularity in the southern United States of imported liquor from south of the border - specifically, tequila.

A simple adaptation of an existing drink, however doesn't quite explain the rapid growth in popularity of the drink in the 1940s and 1950s that continues to this day nor the drastic reduction in complexity (a daisy is made with upwards of 7 ingredients.) So the title of godfather of the margarita was pretty much up for grabs for the latter half of the twentieth century. After much speculation and detailed research, the most widely accepted story is that of a bartender from Ensenada, Mexico by the name of Don Carlos Orozco.

Don Carlos was a bartender at Hussong's Cantina on the western coast of the Baja Peninsula. On a slow afternoon in October of 1941, he was experimenting with some new drink recipes when in walks Margarita Henkel - the daughter of the local German ambassador. Being a customer of some prestige, Don Carlos offers her his new experiment in welcome. She had no idea then, but she was taking the biggest step forward in the history of tequila since the conquistadores.

In the ensuing decades, there have been countless incarnations of the famous beverage have developed. Margarita flavors run the gamut from chipotle pineapple to blood orange and just about anything you can think of in between. In total, the margarita has become so popular that, in 2008, it was the number 1 most ordered drink in the US, accounting for 18% of bar drink orders.

The Story Behind Favela's Fusion



Veronica Favela-Diaz is the owner of Favela’s Restaurants located in Fairfield and Vacaville. Born and raised in Northern California, Veronica is a first generation of Mexican decent and is the first of three children to Elisardo Favela and Josefina Saucedo. She was lured into the culinary world at the young age when her father’s passion for food was the center of attention at dinner time.

By 1993 and demand from out-of-town customers, prompted Veronica to expand the business and open a second location in Vacaville which has been a success since it’s opening. Never straying from the original intention, never losing focus on consistent and affordable Mexican food and excellent service, the restaurant continued its steady rate of growth. By 1998 a third location on the north side of Fairfield was opened.

While attending College, a young Veronica and her father found a need for a new style of Mexican restaurant; it would be a casual style with festive surroundings and by 1991 the first Favela’s in downtown Fairfield was opened. Two years into the business and never giving up in school, Veronica successfully completed college and obtained a Bachelor Degree in Education from the Sacramento State University.

Shortly after marrying her best friend Edgar, the couple traveled all over México to uncover the traditional “Sabores de Mexico” and thanks to the entrepreneurial success of the restaurants; they were encouraged to elevate their own standards in the Mexican cuisine. These travels inspired them to open in 2008 their latest venue: - “Favela’s Fusion Tequila Lounge”. This restaurant obtained the prize for the Best New Business in Solano County and has obtained great recognition in the community for the fresh contemporary new take on Mexican cuisine.

Veronica has always been eager to improve things in the community; she has been a member of the Fairfield Planning Commission and during her term, she assisted in the re-development of Fairfield’s Downtown.

She whole-heartedly believes in always providing the best customer service, continuously learning about food, culture and always having fun with “La Familia”.

With a desire of elevating our cuisine & atmosphere to represent the artistic flavors of various regions of México and introducing its Art and Craftsmanship, we created Favela’s Fusion Tequila Bar. As young kids, the center of our family evolved around the kitchen watching my Dad’s cooking. As we grew older, we started to appreciate his wonderful passion and art for cooking. By 1991 we were ready to share it with you and the first Favela’s Restaurant was born.What was once a dream, it is now a 20 year dream come true!

Thank you to all that have crossed our doors, we take pride in what we do since we consider Mexican food an art with all its color and flare. We will cross all boundaries to perfect it and not hold back to create it.

Favela Hopes Her Solano Success Inspires Others Across Region

FAIRFIELD — Veronica Favela’s success with her local Favela’s restaurants won her a Telemundo television award earlier this year as one of the Bay Area’s top Latino business leaders.

She went to a ceremony in April at the Four Seasons hotel in San Francisco and that’s not necessarily the end. As a result of the award, she has been invited to attend the national Hispanic Chamber of Commerce convention this September in Florida.

But the Telemundo award, while recognizing today’s leaders, is also about the future.

“They represent the working spirit of our community and with their example they will inspire a new generation of Hispanic leaders,” Erika Diaz, station manager for Telemundo KSTS-TV48, said in a news release.

That’s a role Favela embraces. Besides running the restaurant, she also teaches Spanish to students in K-8 at Holy Spirit Catholic School. She knows the value of teaching, she said.

Latino youth face some special challenges, such as the stereotype that Latinos are lazy, Favela said. They will have to work to overcome such stereotypes, as well as to go to college when they might be the first in their family to do so, she said.

Favela attributes part of her own success to her parents’ efforts to put her and her brother and sister through college.

“They didn’t have the opportunity,” Favela said. “They gave us the opportunity.”

Favela graduated from Sacramento State University with a degree in business. Then, at age 22, she tried to decide what business to launch.

She talked to her father about starting a restaurant. He gave her family recipes and the first Favela’s restaurant opened in 1990 in a small storefront on Texas Street in Fairfield near the downtown. People ordered burritos and tacos at a counter and could eat at one of the several tables or take their food away in a bag.

A Vacaville restaurant followed in 1993 and another Fairfield restaurant, this one on North Texas Street, in 1998. Three years ago, Favela closed the original restaurant and replaced it with Favela’s Fusion on Oliver Road in Fairfield.

Favela’s Fusion is a sit-down restaurant with a bar with elaborate decor. Favela describes it as a fusion of foods from different parts of Mexico with the artwork that decorates the walls and music. This new restaurant really put the business on the map, she said.

“It takes Mexican food in Fairfield to a whole, new level,” Favela said.

Her advice to others who want to begin a business — work really hard.

“And to love what you’re doing,” she said, adding that the business should fill you with energy.

As for the future, Favela plans to help honor others. She plans in September to host a Solano Hispanic Chamber of Commerce event at Favela’s Fusion for 25 outstanding women in the community.
