Favela’s Fusion Upscale, Elegant: Fairfield Restaurant Takes Mexican Dining to Next Level

FAIRFIELD — Before you go to Favela’s Fusion, smash any notions or memories you may have about Mexican dining.
You are not going to a funky dive or a homogenized chain restaurant. And you may not find a typical plate of rice, beans and an entree for less than $10.
At Favela’s, you are going to experience Mexican fine dining at its best from beginning to end. You will pay more. It will be worth more.
While the exterior of Favela’s Fusion may be nondescript, visitors who enter the restaurant are immediately transported by the sophisticated, artistic and enchanting space inside.
Original art from Guadalajara adorns the walls. Comfortable, intimate seating invites and welcomes. Experienced staff members are on hand to explain the comprehensive and intriguing menu. They are also available to assist with many of the restaurant’s cocktail or wine options available at the full bar.
“We wanted to take the Mexican dining experience to the next level,” says Veronica Favela-Diaz, who together with her husband owns Favela’s Fusion and two other more traditional Mexican restaurants located in Fairfield and Vacaville. “We are not trying to present something fast or cheap, which a lot of people are accustomed to. We worked hard to develop a special vibe and culinary experience that would help show another side of food from Mexico.”
While the entrees are tempting, the restaurant’s appetizers are a fascinating gastronomical journey all on their own. They range from their well-loved guacamole to two different types of ceviche to empanadas and Favela’s exclusive “Z” tacos made with sirloin steak and melted cheese. Special appetizer prices are available from 3 to 6 p.m. daily.
Main plates feature classics with new twists, such as the Enchiladas Oaxaquenas dish that offers corn tortillas stuffed with shredded chicken and topped with a customized mole sauce (a traditional gravy made of dried chilies, plantains, raisins, chocolate and nuts) that is made from scratch. Also on the menu is a jumbo shrimp dish in a tequila sauce and Favelas well-known and beloved Chile Relleno. Prices for appetizers can range from $7.50 to $10.25 while entrees average at about $20.
“Our food is top quality,” says Favela-Diaz. “Truly good Mexican food is very complicated and there are several steps that must be taken to ensure that it’s special. We have a consultant chef from Napa who lived in Mexico and was inspired by his grandmother’s dishes. He has helped us with making sure we continue to offer the best of authentic Mexican cooking but also modern techniques. Everything we make is chopped, peeled and roasted on site. We don’t take any shortcuts.”
Favela-Diaz, who has an insatiable curiosity about culture and cuisine, is celebrating her 25th anniversary in the restaurant business this year.
“It just started out as a crazy idea of mine to go into the business, but I really found a passion for it,” she says.
She gives a great deal of the credit to her staff members. Many of them have been with her since she started out.
“There is so much passion among the people who work here, and they really make it happen,” she says.
Favela’s Fusion is located at 1500 Oliver Road, Suite D in Fairfield. The hours of operation are 11 a.m. 9 p.m. Monday, Tuesday, Wednesday, Thursday, Friday and Sunday.
